Filet Mignon — 6 oz

Six-ounce filet mignon, individually packed, from Marin Sun Farms in Point Reyes.

The tenderloin is the leanest cut on the animal and the least forgiving. Get the pan properly hot, three minutes a side for medium rare, then rest it a full ten minutes off the heat. Finish it with tallow or butter in the pan — there isn’t enough fat in the cut itself to carry the flavour on its own.
