Air-chilled is the detail worth paying for. Most American chicken is water-chilled — dropped into a communal chlorinated bath after slaughter, where it absorbs water. That water is legally allowed to make up a percentage of the weight you pay for, and it steams the bird in the pan instead of browning it. Air-chilling uses cold air instead, so the meat holds no added water, the skin crisps properly, and the flavour is concentrated rather than diluted.
