About this product

Aged 14 days, wild-harvested on Maui. The tender, versatile cut from the rear leg.

Axis deer were introduced to Maui in 1959 and now number in the tens of thousands with no natural predators, stripping native forest and farmland. Maui Nui harvests them at night in the field, one calm animal at a time, and processes on a mobile USDA-inspected unit within the hour. No feedlot, no antibiotics, no transport stress. The deer eat wild plants on volcanic soil, and the meat is lean, mineral-rich and dense in B vitamins and iron.

Medallions come from the rear leg and are naturally tender, then aged two weeks for flavor. Sear them like a small steak, or braise them; leg muscle has enough structure not to dry out. Rich, clean flavor with nothing gamey about it.
