Single-flower raw Hawaiian honey, unheated and unfiltered, from a fourth-generation beekeeping family.
Most honey is a blend. Big Island Bees moves their hives so each harvest comes from one bloom, and the difference is obvious in the jar: the lehua is white and smoothly crystallized, the macadamia is dark amber and liquid, the wilelaiki is light and faintly spicy. None of it is heated or filtered, so the pollen, enzymes and aroma are intact, and the bees are kept without chemicals, miticides or artificial feed. The lehua and wilelaiki honeys are certified organic.
