Con Ternura's naturally leavened dough, portioned, proofed and cooked on a griddle the way English muffins are supposed to be made. Split them with a fork, not a knife, and toast until the edges go crisp and the inside holds a pool of butter.

The long fermentation with a wild starter breaks down much of the gluten and phytic acid in the flour before you eat it, which is why many people who feel heavy after ordinary bread digest true sourdough comfortably. No commercial yeast, no dough conditioners, no preservatives, none of the additives in the supermarket six-pack.
