Beef liver from Engler's 100% grass-fed, grass-finished, regeneratively raised cattle. The most nutrient-dense cut on the animal — nature's multivitamin, and the one our customers ask for by name.

Vacuum-packed in roughly 0.6 lb portions. $9 per pack.

Cooking it: Soak in milk or lemon water for 30 minutes to mellow it, pat dry, then sear hot and fast — two minutes a side, still pink in the middle. Overcooked liver is where the bad reputation comes from.
