Whole beef tongue from Engler's 100% grass-fed, grass-finished, regeneratively raised cattle. Rich, tender and deeply beefy once it's braised — this is what lengua tacos are made from, and one tongue feeds a table.

One whole tongue per pack, roughly 2.6 lb. $36 per tongue.

Cooking it: Simmer low with onion, garlic, bay and salt for 3 to 4 hours until a knife slides in easily. Peel the skin while it's still warm — it comes off in sheets — then slice, dice, or sear the pieces for tacos.
