A square of honeycomb cut straight from the frame, sealed by the bees.
This is honey the way it exists inside the hive: raw sage honey still in its wax cells, capped by the bees themselves. A 12.3 oz piece cut from a full frame, untouched by heat, extraction or filtering. Fantozzi calls it the filet mignon of honey and that is about right.
The wax is fully edible and mild, and eating honey in the comb means you get everything the bees put there: raw honey, pollen, propolis and enzymes, with nothing lost in processing. Chewing the comb has been a traditional treat for as long as people have kept bees.
Who this is for
- You build charcuterie or cheese boards and want the centerpiece
- You want honey in its most unprocessed form
- You are buying a gift for someone who has everything
- You have kids who have never seen where honey comes from
How to use
Slice a piece onto cheese, toast or yogurt with a pinch of sea salt, or eat it straight. The wax can be chewed and swallowed or discarded. Store at room temperature in its container; do not refrigerate. 12.3 oz. Not for children under one year.
Thomas Fantozzi grew up on a family farm, started two hives in 2017 after a beekeeping class at Cal Poly, and now runs hundreds of hives out of Patterson, right here in the Central Valley.
