A leaner 90/10 grind for people who'd rather add their own fat — tallow, butter, whatever the dish wants. Same cattle, same pasture, less fat in the pan.

Grass-fed and grass-finished. No grain, no feedlot, no added hormones or antibiotics.

Cooking it: at 90/10 there's very little fat to protect the meat, so a hot pan and a short cook. Add tallow or butter if you're browning.
