Axis deer were introduced to Maui in 1959 and now number in the tens of thousands with no natural predators, stripping native forest and farmland. Maui Nui harvests them at night in the field, one calm animal at a time, and processes on a mobile USDA-inspected unit within the hour. No feedlot, no antibiotics, no transport stress. The deer eat wild plants on volcanic soil, and the meat is lean, mineral-rich and dense in B vitamins and iron.

This ground is trimmed from muscle, not scraps, and it is 99% lean. It makes a very good smash burger, tacos, meatballs, chili or Bolognese. Because there is so little fat, cook it a shade less than beef and add a little olive oil or butter to the pan.
