100% grass-fed skirt steak, inside or outside. The cut for carne asada and fajitas. Sold by weight at $23/lb.

Skirt steak is thin, loose-grained and full of flavor. Marinate it, grill it hot for two or three minutes a side, and slice it thin across the grain. Outside skirt is the thicker, more tender of the two; inside skirt is a little leaner and takes a marinade well.
