What UMF 15+ and MGO 514+ actually mean

These are the two numbers worth understanding, and most jars on the shelf only give you one.

• MGO 514+ — methylglyoxal, the naturally occurring compound that gives mānuka its potency. Higher number, higher concentration.
• UMF™ 15+ — the Unique Mānuka Factor grading system, an independent certification that tests four natural markers, not just one: MGO, leptosperin, DHA and HMF. It verifies the honey is genuinely mānuka, genuinely from New Zealand, and hasn't degraded on the shelf.

How to use it

Half a teaspoon to a teaspoon a day, straight off the spoon or stirred into tea, yogurt or toast. Don't cook with it — heat undoes what you paid for.

If it crystallizes, that's a good sign. Raw honey does that. Stand the jar in warm water and it comes right back.
