Bill's Bees — Raw Orange Blossom Honey

Light, aromatic and almost floral. Like standing in an orange grove in bloom.

That is how Bill describes it, and it is accurate. Orange blossom is the easy honey: pale gold, delicate, a little citrusy, and the first one to reach for in tea, on oatmeal or in baking where you want sweetness without a strong honey flavor. Bill's bees gather it in the orchards of California's citrus belt after the almond bloom each spring.

It is raw, unfiltered and never heated, so the pollen, enzymes and aroma stay in the jar. It may crystallize over time, which is normal for raw honey. Set the jar in warm water to loosen it.
