Bill's Bees — Raw Wildflower Honey

Wildflower is what the bees bring in when nothing in particular is blooming and everything is: sage, buckwheat, chaparral, mustard and whatever else the canyon offers that spring. The color shifts from light gold to darker amber year to year depending on the bloom, and so does the flavor. That variety is the point. Wildflower honey carries pollen from dozens of local plants, which is why people looking for local pollen exposure choose it.

Harvested April and May in the San Gabriel Mountains. Raw, unfiltered and never heated.

• 16 oz or 8 oz jar. May crystallize over time, which is normal. Warm gently to loosen
