About this product

Lean, boneless pasture-raised pork that cooks in minutes. The weeknight answer.

Sirloin cutlets come from the hip end of the loin: lean, tender, boneless and thin enough to cook fast. Pound them for schnitzel, sear them with garlic and herbs, or slice for stir-fry. Because this pork is pasture-raised, it has real flavor and a rosier color than commodity pork. Stemple Creek raises their hogs outdoors to California Prop 12 standards.

Who this is for

  • Busy weeknights: thaw, season, sear, done
  • Schnitzel, katsu and pork piccata
  • Families looking for a lean protein kids will eat
  • Meal-preppers who want an easy portion-sized cut

How to use

Thaw in the fridge. Season or bread, then cook in a hot pan with butter or tallow 2 to 3 minutes per side until 145°F inside. Rest 3 minutes. Don't overcook: lean pork stays juicy when it's just done.

Catch-weight cut: packages average about 7 oz and are priced per package. Sold frozen.

From Stemple Creek Ranch in Tomales, California, where the Poncia family has raised livestock on the same Marin County land for four generations, regeneratively and mostly certified organic.
