About this product

The living brine from Borscht Kraut: beet, dill and garlic in a deep red, earthy-tangy probiotic shot. The closest thing to drinking a bowl of borscht.

A gut tonic is the liquid that forms when vegetables wild ferment in salt brine, and it is where the Lactobacillus cultures are most concentrated. This one is drained from Wise Goat's Borscht Kraut, so it carries beets, carrots, garlic, dill and onion along with the cultures, lactic acid and enzymes of fermentation. It is raw and unpasteurized. Beets bring betalains and folate; garlic and dill bring the flavor. It sits between a beet kvass and a kraut tonic: earthier than cabbage brine, more savory than kvass, with no sugar and no vinegar.

Who this is for

  • You want beets for their traditional liver and blood support in a daily shot
  • You want a probiotic tonic with savory depth rather than plain salt and sour
  • You grew up on borscht and want that flavor in the fridge year round
  • You make soups and dressings and want a live-culture ingredient

How to use

Start with one ounce a day, first thing or with a meal, and work up to a shot glass. Drink it straight, over ice, or cut with sparkling water. Splash into cooled borscht or beet salad, or use as the acid in a dressing. Shake gently before pouring.

Ingredients: organic cabbage, organic carrots, organic beets, organic garlic, organic dill, organic onions, sea salt. 14 oz. Keep refrigerated. Live and fermenting, so open slowly over a sink. Beets can turn urine pink; that is harmless.

Made by Wise Goat Organics in Hollister, California: a small, woman-owned, USDA Organic certified fermentery run by Mary Risavi, a Nutritional Therapy Practitioner, in small batches in glass and stainless steel with produce grown within 20 miles of the kitchen. Two-time Good Food Awards winner.
