About this product

A green hot sauce made from sauerkraut: jalapeño, cabbage and garlic fermented over a year into a tart, spicy, live-culture verde.

Green Kraut Hot Sauce is what happens when you ferment jalapeños with cabbage and garlic the way you would a kraut, then blend it. The long ferment, more than a year, turns the peppers tangy and rounded and builds the same live Lactobacillus cultures you get in sauerkraut. It is raw and unpasteurized, so those cultures and their enzymes are still in the bottle. Think of it as a salsa verde with the sour brightness of kraut and real jalapeño heat, with no vinegar and no sugar.

Who this is for

  • You want probiotics at breakfast and you are not going to eat kraut with your eggs
  • You love verde sauce on chilaquiles and tacos
  • You avoid vinegar-based hot sauces or added sugar
  • You want a fermented food that disappears into food you already eat

How to use

Shake and pour on chilaquiles, scrambled eggs, guacamole, tacos, roasted potatoes or anything you would put verde sauce on. Add at the table, not in the pan, to keep the cultures alive.

Ingredients: organic jalapeño peppers, organic cabbage, organic garlic, water, unrefined sea salt. 5 oz bottle. Keep refrigerated. Live and actively fermenting, so open slowly over a sink.

Made by Wise Goat Organics in Hollister, California: a small, woman-owned, USDA Organic certified fermentery run by Mary Risavi, a Nutritional Therapy Practitioner, in small batches in glass and stainless steel with produce grown within 20 miles of the kitchen. Two-time Good Food Awards winner.
