About this product

The living brine from Purple Cabbage Kraut: clean, bright, vivid magenta, and the mildest gut tonic in the line.

A gut tonic is the liquid that forms when vegetables wild ferment in salt brine, and it is where the Lactobacillus cultures are most concentrated. This one is drained from Wise Goat's Purple Cabbage Kraut, the gentlest, least sour kraut they make, with juniper and caraway in the background. It is raw and unpasteurized, so the live cultures, lactic acid and enzymes of fermentation are intact. Purple cabbage is rich in anthocyanins, the antioxidant pigments that give this tonic its color, and they come through in the brine. No sugar, no vinegar, no spice.

Who this is for

  • You are new to gut tonics and want the mildest one to start with
  • You want probiotics without garlic, chili or strong flavors
  • You want an antioxidant-rich drink that is not fruit juice
  • You want a colorful, live-culture acid for dressings and pickled onions

How to use

Start with one ounce a day, first thing or with a meal, and work up to a shot glass. Drink it straight, over ice, or cut with sparkling water. Use it to quick-pickle sliced red onion or as the acid in a slaw dressing. Shake gently before pouring.

Details: made from their Purple Cabbage Kraut of organic purple cabbage, organic juniper berries, organic caraway seed and unrefined sea salt. 14 oz. Keep refrigerated. Live and fermenting, so open slowly over a sink.

Made by Wise Goat Organics in Hollister, California: a small, woman-owned, USDA Organic certified fermentery run by Mary Risavi, a Nutritional Therapy Practitioner, in small batches in glass and stainless steel with produce grown within 20 miles of the kitchen. Two-time Good Food Awards winner.
