About this product

The living brine from Wise Goat's award-winning Vegan Kimchi: ginger, garlic, chili and seaweed in a probiotic shot with no fish sauce and no sugar.

A gut tonic is the liquid that forms when vegetables wild ferment in salt brine, and it is where the live Lactobacillus cultures are most concentrated. This one is drawn from their Vegan Kimchi, so it tastes like kimchi in a glass: savory, gingery, spicy and tangy, with the umami of arame seaweed. It is raw and unpasteurized, so the cultures, lactic acid and enzymes of fermentation are intact. Ginger and garlic are both traditional digestive foods, and this is the most flavorful way to get them with your probiotics. It is also what Wise Goat uses as the starter brine for their carrot daikon relish.

Who this is for

  • You want a daily probiotic shot with enough flavor to look forward to
  • You reach for ginger when your stomach is off
  • You are vegan or avoid fish sauce, which most kimchi contains
  • You cook Asian food and want a live-culture base for dressings and marinades

How to use

Start with one ounce a day, straight or with a meal, and work up to a shot glass. Drink it cold, or cut with sparkling water. Whisk into sesame oil for a dressing, splash into ramen or fried rice after cooking, or use it to start a quick pickle. Shake gently before pouring.

Ingredients: water, organic napa cabbage, organic carrots, organic daikon, organic sesame seeds, seaweed, organic red pepper, organic garlic, organic ginger, sea salt. 14 oz. Keep refrigerated. Live and fermenting, so open slowly over a sink.

Made by Wise Goat Organics in Hollister, California: a small, woman-owned, USDA Organic certified fermentery run by Mary Risavi, a Nutritional Therapy Practitioner, in small batches in glass and stainless steel with produce grown within 20 miles of the kitchen. Two-time Good Food Awards winner.
