Chico Rice grows, mills and bags its own rice on the family farm near Willows, a couple of hours up the valley from us. Japonica is a medium-grain rice that originated in Japan: slightly sticky, sweet and complex, and the classic choice for sushi and Japanese and Korean cooking. It is versatile enough for risotto, stir-fries, rice bowls or a simple side. Because Chico Rice mills in small batches, the rice you buy is fresh, which you can taste in the aroma and sweetness.

Two styles

• Blonde Milled: Chico Rice's signature, milled in the Japanese haiga-mai style. The artisan milling gently removes only part of the bran, so you keep more of the grain's nutrition and nutty sweetness while it still cooks quickly and tastes like a premium white rice. The best way to move a white-rice family toward something more wholesome.
• Brown Milled: the whole grain with its bran intact, for a bold, nutty flavor and a lovely fragrance. Brown rice digests slowly and keeps you feeling fuller, longer, which makes it a favorite with healthy eaters.

How to use
