Most roasted almonds on the shelf are cooked in canola, sunflower or some other seed oil, and it rarely makes it to the front of the bag. Ours are roasted in grass-fed, grass-finished beef tallow instead: a stable, traditional fat that holds up to heat, crisps the almonds all the way through and carries the seasoning into every bite. Then they get the same proprietary Cowboy Steakhouse blend we built for a cast-iron ribeye, the one in our Cowboy Steakhouse Butter and Almond Satay. Garlic, shallot and onion come first, cracked pepper and turmeric behind them, rosemary and thyme in the back, then a warm finish from crushed red pepper. Crunchy, deeply savory and a little addictive, with no sugar coating and no preservatives.

The almonds are organic and grown right here in California's Central Valley, the best almond country on earth. Almonds bring plant protein, fiber, magnesium and vitamin E; tallow adds the richness and the fat-soluble vitamins that come with grass-fed beef fat. It is a snack that actually holds you over.
