In the kitchen

Tallow was the fat American kitchens ran on before seed oils took over, and it earns its place. A high smoke point around 400°F means fries come out shatteringly crisp, steaks get a proper crust, and roast potatoes turn golden the way nothing else manages. Fold it into pastry for flake, sear in it, confit in it, pop corn in it. It's clean-tasting and won't compete with your food.

On the skin

Suet tallow is remarkably close in composition to the oils your own skin makes, which is why it absorbs instead of sitting on top. Rich in vitamins A, D, E and K and in conjugated linoleic acid, it's the base for balms, whipped body butters, salves, lotion bars, soaps and candles — or use it plain, straight from the bucket, on dry hands, elbows and heels.
