Maple Sea Salt Almond Butter

Woodfired maple. Whole sea salt. Fresh-roasted almonds. That's the whole story.

Most maple nut butters taste like candy because they're built on cane sugar with a whisper of maple for the label. We went the other way. Real maple sugar carries the sweetness, then woodfired Grade A Very Dark syrup — boiled over an open flame, not steam — brings the smoke and caramel you can't get any other way. Unrefined whole sea salt, milled fine, pulls it into focus. Whole vanilla bean, ground, not extracted.

Then the part nobody else does: grass-fed beef tallow. A small amount, rendered from suet, blended in. Not a gimmick — it's what gives this spread a body and mouthfeel plant oils can't produce. Rich without being greasy. It coats warm sourdough the way butter does.

Tastes like: Toasted almond first, then maple and woodsmoke, then salt. Finishes clean and long. Sweet, but grown-up about it.
