This is the steak half of a certified organic rear quarter from Marin Sun Farms in Point Reyes — the Mindful Meats program, certified organic and non-GMO. No hormones, no antibiotics, no grain, ever. Dry-aged, cut, vacuum sealed and frozen. Every package is labeled with its own weight.

No ground beef, and that is the point. A share is normally close to half ground. This is whole-muscle cuts and braising meat only — including the butcher's cuts most people never get to see: bavette, tri-tip, picanha, hanger, flank, velvet and spider steak.

There are two lots and they are not identical, because several of the butcher's cuts are a single sealed piece off a single animal. Both lots are matched to within ten dollars and about a quarter pound. Pick the one with the cuts you want.
