Rendered from the suet — the firm fat around the kidneys and loins — of Stemple Creek's grass-fed, grass-finished cattle in Tomales, California. Solid and creamy white at room temperature, melting to a clear golden fat when it warms.

Smoke point around 400°F, which makes it the right fat for high-heat cooking — frying, roasting, searing. Potatoes cooked in tallow are a different food entirely.
