Grass-fed and grass-finished beef kidney from Michael and Mary Engler's fourth-generation family ranch in Sonora. A lean, iron-rich organ meat — one of the most nutrient-dense cuts on the animal, rich in B12, selenium and protein.

To cook: soak in cold water or milk for an hour to mellow it, trim the core, then slice thin. Classic in steak-and-kidney pie, sautéed quickly with butter and onions, or ground into organ blends. Do not overcook — it turns tough fast.
