Cultured raw butter from Raw Farm in Fresno — churned from raw cream that’s been cultured first, which is how butter was made before refrigeration and why it tastes faintly tangy rather than flat.

Deep yellow in the season the cows are on green grass, paler when they aren’t. That colour is carotene coming through the fat, and it’s the honest signal that supermarket butter uses annatto to fake.
