Raw cheddar, shredded, from Raw Farm in Fresno. Made from raw milk and aged past sixty days, which is the line the FDA draws for raw-milk cheese.

No potato starch, no cellulose, no anti-caking agents — which is why it clumps a little in the bag and melts properly in the pan. Bagged cheese from a supermarket is coated to stop it sticking, and that coating is exactly what stops it melting.
