The hot one: raw-milk Gouda with habanero.

Dutch-style farmstead cheese from raw cow's milk from the Stuyt family's own herd, with habanero pepper through the curd, aged at least sixty days. Habanero brings real heat and a fruity, floral note that jalapeño doesn't have, and the rich, creamy cheese keeps it from running away with you. Raw milk keeps the enzymes and cultures that pasteurization removes, so it tastes fuller than a young cheese usually does.

Made by the Stuyt family, a fourth-generation dairy family in Escalon, California, who began making cheese from their own milk in 2015.
