Raw-milk Gouda with jalapeño: creamy cheese, fresh green heat.

Dutch-style farmstead cheese from raw cow's milk from the Stuyt family's own herd, with jalapeño pepper through the curd, aged at least sixty days. The heat is present but friendly; the cream in the cheese rounds it off. Raw milk keeps the enzymes and cultures that pasteurization removes, so it tastes fuller than a young cheese usually does.

Who this is for

  • Nachos, quesadillas and tacos that deserve a better cheese
  • Jalapeño poppers without the stuffing
  • Burgers on the grill
  • Anyone who finds pepper jack a little bland
