Raw-milk Gouda with onion and parsley: mild, savory, and good on nearly everything.

Dutch-style farmstead cheese from raw cow's milk from the Stuyt family's own herd, with onion and parsley worked into the curd and aged at least sixty days. Gentler than the garlic herb, with a fresh green note from the parsley. Raw milk keeps the enzymes and cultures that pasteurization removes, so it tastes fuller than a young cheese usually does.
