Smoked Gouda is the style most people know from the deli counter; this is the farmstead version, made from raw cow's milk from the Stuyt family's own herd in Escalon, aged at least sixty days, and smoked. Smoky and savory with a creamy, buttery center. Raw milk keeps the enzymes and cultures that pasteurization removes, so it tastes fuller than a young cheese usually does.

Made by the Stuyt family, a fourth-generation dairy family in Escalon, California, who began making cheese from their own milk in 2015.
