Certified organic ground beef, 85/15, in one-pound packs. From retired organic dairy cows on small family farms in Marin and Sonoma County — animals that spent their working lives on organic pasture and would otherwise have gone into the commodity system.

That history is why it tastes the way it does. Older cattle give beef that is deeper, beefier and more mineral than the young steers most ground beef comes from. It is a different flavour, and once you have cooked with it a few times the supermarket version tastes thin.

Certified organic. Non-GMO Project Verified — Mindful Meats was the first Non-GMO Project Verified beef in the country.

On the feeding, plainly: roughly 80% of these animals’ lifetime diet is pasture and dried grasses. The other 20% is certified organic grain and supplements, fed on the dairy. They are never moved to a finishing lot. So this is organic and pasture-raised, but it is not grass-finished — unlike the Engler beef in the same case. Both are good. They are not the same thing, and we would rather you knew which you were buying.
